Chicken Cordon Bleu- Serves 2

You will need:                                                          Ingredients:
Stove                                                                        Cooking Spray
Oven                                                                         2 teaspoons margarine
Skillet                                                                       2 skinned/boned chicken breast                                                                                                 (4oz/ea)
Spoon                                                                       2 slices boiled ham (1/2oz/ea)
Tongs                                                                       2 slices Swiss cheese (1/2oz/ea)
Pyrex Baking Dish                                                     4.5 teaspoons plain dried bread                                                                                                    crumbs
Toothpicks


1. Heat 1 teaspoon margarine in skillet over medium heat until bubbling. Then add chicken and cook briefly on each side. Slice a pocket in each chicken breast.

2. Place 1 slice ham and 1 slice Swiss cheese in the pocket of the chicken and secure with toothpicks. Transfer chicken to baking dish after spraying with cooking spray.

3. Preheat oven to 400 degrees F.

4. Add remaining margarine in skillet. Once bubbling, add crumbs and stir with spoon to combine. Sprinkle mixture evenly over chicken.



5. Bake until chicken is thoroughly cooked. This should take approximately 15 minutes. Be sure to remove toothpicks prior to serving.
