Tortellini en Brodo- Serves 4

You will need:                                                            Ingredients:
Large saucepan with cover                                           1 (32oz) low sodium chicken broth
Spoon                                                                        1 lemon
Knife                                                                          1 (9oz) package 3-cheese tortellini
Cutting board                                                              1.5 cup frozen baby peas
Stove                                                                         1 teaspoon salt
                                                                                 2 teaspoons garlic powder
                                                                                 1/2 teaspoon ground black pepper
                                                                                 2 tablespoons Parmesan cheese
                                                                                 1 tablespoon finely chopped fresh                                                                                           flat leaf parsley


1. Heat chicken broth in saucepan over medium-high heat. While heating, peel lemon. Place peel in chicken broth. Bring to a boil.

2. Stir in tortellini, cover, and return to boil.



3. Reduce heat and simmer; approximately 10 minutes.

4. Stir in peas, salt, garlic salt, and pepper. Simmer, uncovered, until the tortellini is tender and the peas are heated through. This should take about 2 minutes.

5. Discard lemon peels and squeeze lemon juice in to taste.

6. Serve sprinkled with Parmesan and parsley.
